It is a permanent intolerance to gluten, a protein substance
found in oats, wheat, spelt, kamut, barley, rye, and triticale.

Bloating, diarrhea, weight loss, nausea, tiredness, anemia, canker
sores, headache, skin problems, osteoporosis: are some of the
symptoms of celiac disease which can vary from person to person
and which can occur with varying severity.

The incidence of this intolerance in Italy is estimated in one
individual every 100/150 people. Therefore, celiac people would
potentially be 400 000, even though about 65 000 have been
diagnosed up to date.
